Really interesting book that talks about his experience working in the kitchen from a very young age. And how the world of cooking and chefs has changed over the decades. There's a lot of similarities with how cultures have changed and in some ways lost the things that taught the lessons to the older generations that I see the younger generations are having a hard time with or gaps in things.
